  2. After 45 minutes, remove the dish, baste the sweet potatoes with the mixture, cover again, and continue baking for another 30 minutes or until the sweet potatoes are tender.

Adding Vegan Marshmallows (Optional)

  1. If desired, add vegan marshmallows over the sweet potatoes and bake for a few more minutes without the foil until lightly browned.
  2. You can also use the broil setting for quicker browning, but watch closely to avoid burning.
